About the recipe

Fantasy fudge, also known as marshmallow creme fudge or chocolate marshmallow fudge, is a delicious melt-in-mouth treat specially prepared during the Christmas holiday as a gift to your loved ones or to be served as after-meal bites in mini cupcake liners.

This fantasy fudge recipe is no bake, prepared using sweetened condensed milk, chocolate, and marshmallow fluff (cream). We have added toasted nuts, Oreos, and chocolate chunks to make it more festive.

I have not used evaporated milk or a candy thermometer. I have used homemade fluff instead of store-bought (e.g.,Kraft jet-puffed marshmallow creme) marshmallow fluff.

How to make the best fantasy fudge at home?

Line your 9-inch by 9-inch baking pan with parchment paper.

In a glass bowl, add condensed milk and chocolate. In a large pot over medium-high heat, add 2 inches of water and bring it to a boil. Place the glass bowl over the pot to mimic a double boiler. Stir using a whisk or spatula until the chocolate melts and achieves a smooth and silky consistency.Check out the video here.

Pro Tip

How much fluff to add is an individual choice. If you want the fudge to have a more robust marshmallow flavor, add up to ¾ cup of fluff to the recipe. But remember, your fudge will be softer and gooey, like the one you see in the picture. It is super addictive. But if you want a firmer fudge, reduce the fluff to ⅓ cup. I generally add more fluff and make it a little different, as all other fudge I prepare for my dessert platter will be firmer.

Fantasy fudge recipe presented here is a quick and easy recipe mainly because of the addition of condensed milk (e.g., Milkmaid). Do not substitute it with evaporated milk alone or regular milk. Your fudge will not set.

Can you make fantasy fudge in the microwave?

Yes. You can make this recipe in less than 5 minutes with the microwave. Instead of the double boiler method, heat chocolate and condensed milk in the microwave for 90 seconds, stirring at every 15-second interval until the chocolate has melted completely. All other steps are the same. Mix with fluff, nuts, oreos, and set.

How to store fantasy fudge?

You can store them in an airtight container in the refrigerator for up to 2 weeks. To prevent them from sticking, separate the fudge pieces with parchment paper or wax paper.

You can also freeze this fudge for up to 2 months. Wrap it nicely with parchment paper and store it in an airtight container to prevent the formation of any ice crystals. Thaw in the refrigerator overnight before serving.

Variations / Substitutions

You can use white chocolate or dark chocolate instead of regular milk chocolate.

Love peanut butter? Then add it to the recipe to make peanut butter fantasy fudge.

I have added toasted nuts, which are my family's favorite. You can add pecans, cashews, raisins, cranberries, or any other nuts and dry fruits of your choice.

Marshmallow fan? Add 1 cup of mini marshmallows to the recipe if desired. Make sure you chill them so that it doesn't melt when you add them to the melted chocolate mixture.

Why is my fantasy fudge not creamy? ›

Sugar Crystals Formed

It's important to beat the fudge ingredients to develop the right texture, but you won't get smooth, creamy fudge if you beat it when it's too hot. Beating fudge when it's still over heat creates sugar crystals, aka the grittiness you feel in the fudge.

What's the ingredients for fantasy fudge? ›

Fantasy fudge is a decadent blend of the following ingredients: sugar, margarine, evaporated milk, chocolate chips, marshmallow creme, walnuts, and vanilla extract.

What makes high quality fudge? ›

You have to control two temperatures to make successful fudge: the cooking temperature AND the temperature at which the mixture cools before stirring to make it crystallize. Confectionery experiments have shown that the ideal cooking temperature for fudge is around 114 to 115 °C (237 to 239 °F).

Why is Mackinac Island fudge so good? ›

To obtain the world famous taste, the fudge is slowly cooked in traditional copper kettles over a gas flame. Once the desired temperature is reached, the mixture is poured onto marble slabs for a cooling period and then hand-paddled into loaves.

What is the difference between British and American fudge? ›

Turns out that the two are not quite the same, but they're still equally delicious. Denser and sometimes a bit more crumbly than its American counterpart, British fudge comes in dozens of flavors, and is frequently found in gift shops and at outdoor markets and street fairs.

What's the difference between Russian fudge and regular fudge? ›

Golden syrup – is what makes this recipe Russian fudge-style! The added golden syrup gives that extra sweetness and silky texture. Vanilla extract – to give the taste of vanilla to the fudge.

Why is my fantasy fudge so grainy? ›

The most common reason for graininess is because you began beating or stirring it while the fudge was still cooling. It's best to wait until it's cooled to somewhere around 110 to 113 degrees to begin stirring.

Why is my fantasy fudge not getting hard? ›

If your fudge fails to harden in the fridge, it means that you probably didn't cook it to the right temperature. Fudge is a candy, and that means it is extremely picky about temperature - fudge must be cooked to precisely 237–239 degrees Fahrenheit so that sugar forms the desired consistency when cooled.

Why is my fantasy fudge too soft? ›

If there is too much evaporation, when the cooking time is too long, there will not be enough water left in the fudge and it will be too hard. Conversely, if the cooking time is too brief and there is not enough evaporation, too much water will remain and the fudge will be too soft.

How do you fix grainy fantasy fudge? ›

The solution? A fudge do-over. Even though it set up properly, I threw it back into a saucepan with about 1 1/2 cups of water and gently heated the mixture to dissolve the fudge into the water. From there, I pretty much re-did the whole cooking process.

Is evaporated milk or condensed milk better for fudge? ›

Use Evaporated Milk- Make sure to use evaporated milk and not sweetened condensed milk. If you accidentally use sweetened condensed milk your fudge will be incredibly over the top sweet. Cut up the Butter– Before adding the butter in make sure to cut it into smaller pieces for faster melting.

Why is my fantasy fudge crumbly with marshmallow? ›

If it doesn't boil, your fudge will end up too mushy, and if it cooks for too long, you'll end up with a dry, crumbly mess. This is why many recipes recommend using a candy thermometer, so you know exactly when to remove your mixture from the heat.

What is the secret to smooth fudge that is not gritty? ›

Once a seed crystal forms, it grows bigger and bigger as the fudge cools. A lot of big crystals in fudge makes it grainy. By letting the fudge cool without stirring, you avoid creating seed crystals.

Should you stir fudge constantly? ›

It is important to stir constantly with a wooden spoon until the mixture starts to thicken and its surface starts to look dull or matte. Now is the time to stop beating and pour the fudge into a mould. Another tip: Do not scrape the sides of the pan or the spoon used for stirring.

What does cream of tartar do in fudge? ›

Cream of tartar is used in caramel sauces and fudge to help prevent the sugar from crystallizing while cooking. It also prevents cooling sugars from forming brittle crystals, this is why it's the secret ingredient in snickerdoodles!

Why did my fudge not get hard? ›

The main reason is that your Fudge has not reached the optimum temperature. If your mixture only reaches 110 or 112 degrees Celsius it will always be soft. That's why we recommend investing in a sugar thermometer. Another reason your Fudge is not setting is that the ratio of liquid to sugar is too high.
